There’s nothing like the smell of bacon wafting through a campground in the morning. Amiright? Pack some bacon and half your breakfast planning is done.
We like to switch it up between the basic kid friendly meal (where the food DOES NOT TOUCH!) and something a bit more creative.
First things first: Pour some coffee and cook your bacon–outside. Don’t even try to do this inside your camper. We tried once during a rainy morning and the clean up was no fun. Plus, cooking outside is the whole point, right?
We like this thick cut, apple smoked bacon from Trader Joe’s.
Instead of firing up a grill in the morning, use an outdoor stove. They are fueled by small butane fuel canisters.
We like this inexpensive stove. It’s basic, easy to use and packs up really nicely in your camper.

Ingredients:
Eggs (one per taco)
Bacon
Cheese – Mexican melting cheese or cojita
1/4 onion, diced
Sliced avocado
Chopped tomoatos
Sliced jalapeños
Salsa or Pico
Potato, peeled and chopped to about ¼ inch pieces (think small, so it cooks fast and fits in a taco)
Small flour tortillas
Olive Oil (as needed)
Make:
Fry or scramble eggs, salt and pepper to taste.
Cook bacon.
Cook potatoes and onion in left over bacon grease. Be careful not to crowd the pan. Add olive oil as needed.
Lightly warm/brown tortillas on frying pan. Stack together to keep warm.
Assemble tacos on tortillas with toppings as you’d like.
This traditional combo is a perfect fit for our kiddos: pancakes, scrambled eggs, bacon and sliced strawberries.
Instead of buying pancake mix, I love this simple recipe for making your own with natural ingredients. Just pre-measure all the dry ingredients together in a ziplock bag and pack in your camper. In the morning, mix in the wet ingredients and you’re good to go!
Ingredients:
1 cup all-purpose flour
2 tablespoons sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 cup milk
2 tablespoons vegetable oil
1 large egg
Make:
Whisk together flour, sugar, baking powder, and salt. Pour into ziplock bag and store until you are ready to make.
In a medium bowl, whisk together milk, oil and egg. Add dry ingredients to milk mixture; whisk until just moistened. Don’t overmix; a few small lumps are fine.
Pour mix onto hot skillet (on your outdoor stove!).
Cook until lightly browned. Makes about 10 medium sized pancakes.
Serve with syrup, jam and/or fruit toppings!
